I made this great, vegan, gluten free bread in my food technology class the other day and I thought I would share the recipe. It’s a slightly adapted version of this recipe, by nourishingmeals - mainly because of the lack of availability of ingredients, but also due to time constraints. 
[[MORE]]There are quite a few differences in my recipe, which definitely effected the overall quality of my bread - but it still turned out pretty great, so if made correctly I can imagine it being even better. 
I had to use red sorghum flour, due to being unable to find the white variety in my city. I also had to use extra sorghum as a substitute for the teff flour, for the same reason. I used regular rice flour instead of the sweet variety, and whole chia seeds out of laziness, because I didn’t want to ground them. I forgot to add olive oil to the yeast mixture, definitely changing the consistency of the dough and only had enough time to allow it to rise once. I also forgot to use olive oil on the top and didn’t buy sesame seeds. 
For anyone that may be confused, cornmeal is polenta. Try and get the finer variety, as the courser kind will effect the texture of your bread. 
In a lot of places, it can be difficult to find sorghum flour. Most stores don’t really stock it, but lately it’s had an increased profile and might become more accessible soon. For people living in Melbourne, I managed to find it at the NSM Store in Brunswick, on Victoria St, near the station. For people in other cities, I recommend looking up local organic retailers and calling up to ask if they have it in stock or can refer you to somewhere that does stock it. Asking on social networking sites is also useful in locating it, it’s how I managed to find NSM.
